I don't know who your map providers are but there is atleast providers in Sweden that provide unpaved data.

I'm not sure how difficult this will be for a provider to make, but I can imagine it's not technically difficult, but the quality of the data might be very difficult. You would need a provider that know all dirt roads... and then you'd need to be able to know which dirt roads you can and are allowed to go on, and which you are not. This also depends on your vehicle type (adv bike, trail bike, mountain bike, walking). Not saying it's impossible, but the data collection is 'challenging'. A lot more challenging than the data collection for paved roads. I imagine that's why this has not been done yet (that I know of)
