Pause Ride GPS Off

Then when I get back to the bike, I either a) resume the ride on the phone, start the bike, CarPlay and ride off OR b) just ride off and once CarPlay reconnects it resets the connection and the ride tracking resumes.
This weekend I updated to the newest version (firstly great to hear the startup sound back), and did my usual thing. However after pausing with GPS off, a few minutes into my walk I heard the phone make a noise (the noise it makes when tracking resumes if you do not select 'GPS OFF'). Checked the phone and sure enough it was recording again.
So, I again paused with GPS off, yet a few minutes later the phone beeped as it resumed again.
What am I missing? How do we now use the old functionality? I often ride then hike (or shop) then ride, and I never record the walking (or shopping part) via scenic, but also record the whole riding section as one 'ride'
With this new way (GPS off not working it turning itself back on) this is no longer possible, I have to either record my walk as well (or even worse my shopping indoors so it ends up all over the place) or stop the ride totally and have several recordings per day. Not idea.

Ah, yes. I re-read his post. (in my favor, I had yet to have my first coffee for the day...).
I'm trying to work out why you'd want to do it that way. Maybe force close Scenic and restart it when back on the bike, perhaps? That way, the GPS will still be active and you can track your walk, hike or whatever in Strava, etc.?
