Disable Display when Rauning

Have you tried "Guided Access"? It's an accessibility setting from Apple, that can be activated by triple pressing the on/off button on your device. You'll need to set it up first, but once done, it's easy to activate and deactivate: https://support.apple.com/en-us/111795 , and it works with any app, not just Scenic.

Is this a common problem? I've heard about it, but I've never experienced it myself... even when riding in the rain, without anything protecting the iPhone screen from the drops. Does it have to be raining very hard?
